Our History

Soltribe Cuisine is a collective of inspired people formed to help facilitate healthy and conscious  consumption. We offer vegan and gluten-free food of the highest quality, as well as a variety of original drinks and desserts for any occasion.

Starting in 2013 with the simple intention of serving delicious and healthy food, Soltribe quickly grew into something much bigger. We have offered everything from unique catering, event kitchen management, fully vegan weddings and pop-up dinners supporting local causes. Through this evolution, supported by many like-minded people, our vision has expanded to a desire to change the standard food narrative. Break with the idea that nutritious and healthy foods cannot also be delicious and satisfying.

It seeks to make a difference in today’s social and environmental landscape by informing the public that choosing what you eat is the biggest step you can take to change yourself and the world you live in. 2020 was going to be by far our busiest year ever. Like many, the pandemic completely took away our ability to operate, but it hit us particularly hard as we operate almost exclusively at large-scale events.

Once again pushed to evolve, Soltribe creator and chef Keshava Rossi and his wife Lena Larson decided to seize the opportunity to expand their vegan concepts to Latin America and officially established the first Soltribe Cuisine restaurant in San Miguel de Allende, Mexico. Now, with their two children, they hope to have an impact on vegan culture in Mexico as well as in the United States.

On New Year’s Eve 2022, Soltribe Cuisine launched its biggest project: a new and much larger restaurant on the top floor of the local organic market, Mercado Sano. With an extensive menu and seating for 50 people, this new endeavor has established Soltribe Cuisine as one of the best restaurants in San Miguel de Allende. Whether it’s the cocktail menu with 7 colors of cold-pressed juices, the use of only cold-pressed unrefined oils, or live music every week, this has taken the concept to a new level of elegance and quality.
